Engaged to reimagine, rebrand, and renovate a historic institution near Penn State University that had been in continuous operation for 75 years. This multi-million dollar project readied the business for 50+ more years of operations while remaining sensitive to the legacy of the restaurant and its relevancy to the local community.

* Oversaw extensive remodel; provided project management for architecture, construction, and design.
* Led rebranding effort delivering new logo, style guide, and marketing plan.
* Oversaw menu development; assisted in hiring the GM and Chef.
* Developed training materials, SOPs, and employee lifecycle materials for both FOH and BOH operations.
