Oversaw development of the first branded Nutella Café, for the second largest confectionery company in the world, Ferrero Group. The opening of Nutella Cafe marked Ferrero's entry into the US retail channel and created a scalable model for future NYC and European locations.
* Provided operations leadership for the development of a new café concept.
* Delivered a scalable model and a team capable of growing the concept worldwide.
* Hired key leadership personnel, including VP of Operations and Director of training.
* Delivered SOPs and training materials for FOH and BOH operations.
* Oversaw menu development, final product selection, and pricing.
